Steak & Kidney Pudding for 4 People

Here is one just for this cold weather spell, It is really for 4 people but I would say 2 people who eat allot in cold weather.



You will Need

400g (1lb) of Braising Steak
150g (6oz) Lambs Kidney, Diced
2 tablespoons of seasoned Flour
2 Tablespoons of Olive oil
1 Small chopped Onion
375ml or 3/4 pint of Stock
1 teaspoon of Tomato Purée
a pinch of Mixed Herbs


For the Pastry you will need 

200g (8oz) Self raising Flour
100g (4oz) Shredded Suet 
a pinch of salt
Cold Water to mix

Method

Preheat the oven to 180c or Gas mark 4
Dip the meat into the seasoned flour and fry lightly to brown off, Also place the Onions and fry as well until golden.
Place in a casserole dish with Stock, Puree and herbs and cook for 2 hours.

Cool

Put Flour and Suet and seasoning into a bowl and blend into a soft but firm dough. 
Roll 3/4 of the pastry into a circle that will fit a greased 1 litre or 2 pint basin.
Place the pastry over your fist and stretch it in the centre and put it in the greased basin.
Fill it with the cooled meat reserving some of the gravy to thicken and serve separately.
Roll the remaining pastry to fit the top.
Dampen the edges and neatly tuck over the meat filling.

Steam for 2 hours.
( Caution.. Top up your water occasionally with boiling not cold water so it does not evaporate before the 2 hours is up and also cold water will make the pudding very heavy )
