Speedy Spice Cake

You will need two sponge tins for this one.
It was one of my favourites as a child mainly because it had a yummy creamy filling between the sponges.

You will need

6 oz or 170g Self raising flour
1 level teaspoon mixed spice
half a teaspoon cinnamon
5oz or 140g of soft brown sugar
4oz or 112g Butter
2 Eggs
2 tablspoons of milk

mix up all the ingredients into a bowl in any order you like as long as you get a nice creamy smooth mix at the end of it.
Divide the mix into your two sponge tins and chuck into the preheated oven.

gas mark 5 or 190 c  for 25 minutes.

For the filling you will need

3oz or 85g of butter
5oz or 140g of icing sugar
1 tablespoon of milk
1oz or 28g of Saltanas

Cream together in a bowl.

After the sponges are cooked, Cool them out of reach of little fingers, Once cooled spread the filling between the sponges and serve.
